How to use the AF Assist properly on a digital SLR camera?

I own a Canon 350D, and the last concert I photographed on I used flash and my camera kept using the AF Assist, when I pushed the shutter button halfway down, but when I pushed the shutter button down fully, it was still using AF Assist and didn't take the picture. How can I get it to actually take the picture? As I dont want to be in this situation next time I photograph at a concert.

The camera will not take a picture if the lighting is too low to focus properly when you use AF. TO get you close, then turn it off and go manual. It is super important to understand DOF (Depth of Field), so you can max out the manual focus. The flash has a short-short range, and if the subject is too far AF will not let you get shot.
